The Story of Raviolo Caprese
Capri, at the beginning of the 20th Century.
It is a beautiful sunny day.
Mrs Carmi is sitting on her terrace, weaving baskets to sell to local shepherds and farmers.
Suddenly, a ship approaching the harbour catches her attention. To her great surprise, she sees her friends disembarking: they have come to visit her unexpectedly.
What better occasion for a very special lunch?
There is not enough time to go buying something, so Mrs Carmi must make the most of what she has in her caprese home.
She gathers the finest ingredients from her pantry and places them on the table: a genuine local Caciotta, Parmesan cheese, fresh eggs, marjoram, tomatoes, flour, and basil.
What can she prepare?
After thinking for a while, Mrs Carmi makes her decision. She believes that all these flavours could work beautifully together. Although each ingredient may seem simple on its own, when combined they could create something truly delicious.
The result proves her right: everyone loves her new speciality, Raviolo Caprese.
The Experience Includes
- Today this long-standing tradition continues thanks to the younger generation of Carmi’s family. In their workshop, her children continue to prepare delicious Ravioli Capresi with the same passion and care. Raviolo Caprese is both a traditional and authentic product. More generally, we dedicated a whole experience to learning Carmi’s traditional recipe as follows:
- A two-hour lesson on how to prepare the traditional recipe, with Red Tomato or with Lemon from our gardens
- A tasting of Ravioli Capresi, paired with wines carefully selected to enhance their flavours.
